This Coconut Chocolate Chia Bowl is delicious, packed with nutrition and great for boosting your mood & energy levels.
Ingredients
1 cup coconut, oat or cashew milk 1 avocado (medium size, peeled & pit removed) 1/4 cup cacao powder 2 tsp lion's mane (mushroom) powder 2 tsp maca powder 2 tbsp protein powder, vanilla or chocolate (optional) ½ tsp cinnamon 2 tbsp pure maple syrup or honey 1/4 cup chia seeds 1 pinch of sea salt Makes 2 servings
Toppings (per chia bowl) 1 tbsp cacao nibs 1 tbsp coconut flakes (unsweetened) 2 tbsp chopped walnuts 1/2 cup raspberries
Step 1: Blend the avocado, cacao powder, cinnamon, maple syrup, cashew milk, protein powder, maca, reishi, and sea salt in a blender or food processor until everything is combined and smooth. Transfer into a bowl.
Step 2: 3dd chia seeds and whisk to combine well. Cover and refrigerate overnight, or at least 2-4 hours (until pudding-like consistency). If able, give the mixture an extra whisk/stir once it has been in the refrigerator for 30 minutes.
Step 3: add toppings & dig into your mood-elevating bowl.
Time starved? Use our Shroom Energy blend for your base (blend with 1/2 cup coconut milk and 1/2 avocado - should be thick) and pick it up at step 2.
